With all of us being stuck at home, summer has been rather difficult this year. But, we’ve got a recipe that can make it all a little better (and boozy) for all of you - a classic Pina Colada popsicle.

So, let’s get started:
With a Pina Colada (popsicle) in hand, even the dreariest of days start looking up, no? You can always pretend that you’re at the beach (cue soothing sea audio), sit back, and relax, till at least the Zoom call invites start coming in. Plus, lucky for you, this recipe only requires five ingredients that you most likely have sitting at home already.
Ingredients :
1 cup cut fresh pineapple
2 tablespoons coconut rum or any rum you have.
2 tablespoons granulated sugar
1 can of coconut cream
1 tablespoon shredded/flaked coconut
Instructions :
Add your pineapple and rum in a bowl and let it sit for 10 minutes.
While that’s sitting, blend the sugar and coconut cream together until smooth.
Add the bowl of pineapple and rum to the blender, along with the coconut flakes.
Pulse the mixture for just a minute if you want pieces of rum-infused pineapple.
Pour your mixture into a popsicle mold and add your popsicle sticks.
Freeze it for 4 hours, or overnight.
Thaw the popsicle mold at room temperature for 10 minutes before serving.
Your luscious and creamy popsicles are now ready. Cheers!
